
Baby potatoes have a special sweet taste and are fun to cook with. These are fun snack for kids lunch boxes or a good finger food for any party. Here are shallow fried baby potato with a hint of spice and tang and crispy skin.
Potatoes remind me of those Sunday lunches in India with family. Today I made radish Sambar and potato fries for lunch. For a change I made these differently and they turned out super yummy and fun for kids to pop in.


I simply heated some oil and added some mustard seeds and turmeric, chili, coriander, and amchoor powder. Once fried add in the baby potatoes and cover and cook. Skin turns crispy and till cooked. Once done slightly crush them with a fork and cook them for fe mins to get the spices inside the potatoes.
Roasted Baby Potato Fry |Aloo Fry

Ingredients:
2 cups baby potatoes
3 -4 tbs Oil
1 tsp Mustard seeds
1/2 tsp Chilli powder ( adjust to taste)
1 tsp coriander powder
1/2 tsp amchoor powder
Turmeric powder
Hing
Salt to taste
Method:
Stove top version:
- Wash and clean the baby potatoes and let it dry.
- In a heavy bottom pan add the oil and let it heat.
- Now add in the mustard seeds and the turmeric powder.
- Once the mustard splutter add the Chilli powder, oriander powder, amchoor powder and Hing.
- Let it roast in oil for couple seconds.
- Now add in the potatoes and let the oil coat oil over them.
- Now cover the pan and cook it in low to med flame for 5 mins
- Keep stirring the potaos in between for even cook,
- Cover and cook till the potatoes are soft. Now remove cover aadd salt and slightly crush the potatoes to crack then open.
- Now cook it for another couple of minutes for the masala s to mix in.
- Roasted Baby Potatoes are ready to eat.
InstaPot Version
- Wash and clean the baby potatoes and let it dry.
- Turn on the Instapot to saute mode and let it heat
- Now add in the mustard seeds and the turmeric powder.
- Once the mustard splutter add the Chilli powder, coriander powder, amchoor powder and Hing.
- Let it roast in oil for couple seconds.
- Now add in the potatoes and let the oil coat oil over them.
- Now change to manual mode in Instapot and add in the salt.
- Cover and pressure cook (med) it for 2 min.
- Once the pressure is released open the lit and go back to the saute mode and Keep stirring the potatoes for few mins.
- Let the skin crisp up slightly and then crush the potatoes to crack then open.
- Now cook it for another couple of minutes for the masalas to mix in.
- Roasted Baby Potatoes are ready to eat.
