Ingredients

Carrot green and Walnut Pesto Sauce

  • 1 cup Carrot greens
  • 1/2 cup Walnuts
  • 1 tsp Pine nuts
  • 2 cloves Garlic
  • 1 nos Jalapeños roasted
  • 4 Tbs Lemon
  • 1/2 cup olive oil

Carrot green and Walnut Pesto Spaghetti

  • 1 pack Spaghetti
  • Salt to taste
  • 1 large Onion
  • 1/2 cup Cherry tomates
  • pepper crushed to taste
  • water to boil

Instructions

Pesto sauce

  • Roast the Jalapeños in open flame or in the oven
  • Add Carrot greens walnuts, Pine nuts, Jalapeños, garlic, lemon juice, into a blender
  • Grind it to a course paste. add oil when grinding
  • now add salt and give it a quick mix

For Pasta

  • In a pan add some oil and saute the caramelized onions. It should turn translucent and glossy. adding salt to the onion speeds the cooking process
  • Now add the halved cherry tomatoes and cook it for 3 -5 mins.
  • Once done add the pesto sauce as needed and let the mix come together and mix well
  • Meanwhile boil about 10 -15 cups of water ( enough for the pasta)
  • Once the water comes to a boil add the spaghetti and cook it for 10 mins
  • Once it's cooked fish out the pasta and add it to the pesto onion sauce
  • give it a good mix. add crushed pepper as needed.
  • Pasta is ready to be served.
