Instant Pot Tawa Pulao

Leftover rice and left over Pav bhaji masala cooked on a flat Tava on stovetop with some fresh spices makes this a lip smacking meal. Its usually served with raita and some fresh onion slices.

Ingredients

For Pulao

  • 3 cups cooked rice
  • Cinnamon sticks
  • Green cardamom
  • Cloves

For Bhaji Masala

  • 2 tbsp butter
  • 1 tbsp oil
  • 2 tsp cumin seeds
  • 2 medium onion sliced
  • 1 tsp ginger-garlic chopped
  • 2 medium potatoes
  • 3 medium tomato chopped
  • 1 medium green bell pepper chopped
  • 2 medium carrot chopped
  • 10 nos Green beans
  • 1/4 cup green peas
  • 2 tbsp pav bhaji masala
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tbsp lemon juice
  • Salt to taste

Garnish

  • 3 tbsp coriander leaves chopped
  • 3 tbsp mint leaves chopped

Instructions

Making Rice

  • Use left over rice or cook rice as preferred.
  • Cook 2.5 cups of basmathi rice in instant pot for 5-7 mins in manual mode with 4.5 cups of water.
  • Let the pressure release naturally.
  • Fry the paneer on the tawa and set aside

Making Bhaji

  • In another Instant pot heat butter and oil in saute mode.
  • Then Add the onions and, staute them until they start to just change color.
  • Add the ginger and green and tomatoes and stir-fry for another couple of minutes
  • Add the chopped vegetables and give a quick saute for 2 minutes.
  • Add the chilli powder, turmeric, and coriander powder
  • Add the 3 cups water and mix everything thoroughly, another two minutes.
  • now turn the instant pot to manual mode and cook for 6-8 mins. The vegetables will cook very soft.
  • Once done manually release the pressure ( to avoid overcooking of veggies).
  • Turn heat to manual mode and add bhaji masala and stir well. Now trun off the heat and mix in the cooked rice with the Bhaji gravy.
  • Add the lemon juice and garnish with coriander leaves or spring onions, and the fried Paneer. Mix light handed without breaking the rice.
  • Serve piping hot with raita of your choice.

Notes

  • If you do not have an Instant pot Use your regular pressure cooker to make both rice and bhaji and mix it on a flat wok or tava. with some butter and panner.
  • adjust rice water ratio to your liking or the rice you use.
  • Also time to cook depends on the Instant pot so cook rice based on how you cook in your specific instant pot.
  • For totally vegan version Skip the butter and the panner and replace it with oil and tofu or skip it.
