In another Instant pot heat butter and oil in saute mode.
Then Add the onions and, staute them until they start to just change color.
Add the ginger and green and tomatoes and stir-fry for another couple of minutes
Add the chopped vegetables and give a quick saute for 2 minutes.
Add the chilli powder, turmeric, and coriander powder
Add the 3 cups water and mix everything thoroughly, another two minutes.
now turn the instant pot to manual mode and cook for 6-8 mins. The vegetables will cook very soft.
Once done manually release the pressure ( to avoid overcooking of veggies).
Turn heat to manual mode and add bhaji masala and stir well. Now trun off the heat and mix in the cooked rice with the Bhaji gravy.
Add the lemon juice and garnish with coriander leaves or spring onions, and the fried Paneer. Mix light handed without breaking the rice.
Serve piping hot with raita of your choice.
